When great minds work together, it can only result in something extraordinary. Or in the case of our Kitchen Daddy team and Motto Motto, something extraordinarily delicious.
Rewind to late spring 2021, as the first beads of sweat began to fall and the taste of freedom was in the air after a long year of lockdowns. To celebrate those summertime vibes, Japanese visionaries Motto Motto launched a very special, limited-edition lobster roll – with a little help from the KD team.
Cue crowds sinking their teeth into toasted, buttered, burger buns teeming with Atlantic lobster meat, shallots, creamy yuzu dressing, freshly sliced avo and black
fish roe. This people-pleaser sold out incredibly quickly and saw national success for the restaurant chain.
Why the heck not? Motto Motto is about nabbing the best parts of traditional Japanese cuisine and treating them to a contemporary reawakening. So giving the American lobster roll a Japanese bent sounds about right.
While the exact birthplace of the original lobster roll is hotly debated, it’s widely believed that the summer sanga was invented by a fellow called Harry, in his Connecticut restaurant Perry’s. The story goes that the restaurateur whipped one up for a customer one day, and it proved so popular that it soon made the menu. As well as the menus of restaurants up and down the coast.
Of course with its popularity came adaptations. Now, decades later, the many versions are a source of competition between the American states and around the world. In England, it features diced pickle chutney, in Papua New Guinea it’s tossed with lime mayo and wrapped in pastry, and in Colombia it embraces Caribbean prawns, chives and citrus.
So of course, it was time for Motto Motto to work its magic with an innovative Japanese-inspired version.
The Kitchen Daddy team worked closely with our client Motto Motto to develop this unique recipe. The aim was to bring the premium ingredient to the plates of Motto Motto’s diners without the hefty price tag.
The culinary craftmanship of Motto Motto Executive Chef Ryuji Tomihara was complemented by Kitchen Daddy’s ability to source unique ingredients like Atlantic lobster and black fish roe, and its precision in processing the lobster, creating the dressing and arranging for quick distribution.
